Il monastero, oggi trasformato in hotel e luogo di celebrazione, dedicato all’Immacolata Concezione si trova nella Sierra Norte de Sevilla, su un altopiano a 650 metri sul livello del mare, in un luogo idilliaco pieno di storia, circondato da foreste, una fonte inesauribile di acqua e panorami eccezionali. Nell’VIII secolo i Fihridi arrivarono dal Marocco, il cui leader fu eletto Walí di Córdoba dal 747 al 756. Durante questo periodo costruì una moschea, il più grande frantoio dell’Andalusia e un mulino nella zona conosciuta come El Castillejo, e resti di tutte queste costruzioni rimangono oggi. Quando i musulmani se ne andarono nel XIV secolo, Don Pedro El Cruel, re di Castiglia e León, è noto per aver soggiornato a El Castillejo e cacciato gli orsi con il Principe di Galles, noto come il Principe Nero.
Tra il 1417 e il 1420, Fray Lope de Olmedo costruì il monastero di San Jerónimo de Acela sul sito e nel 1476 i monaci certosini rilevarono il monastero di Los Jerónimos. I monaci ospitavano i pellegrini sul Cammino di Santiago nella Casa del Peregrino (Casa del Pellegrino) e coltivavano la terra. Hanno anche introdotto le proprie tecniche per la produzione di liquori, che ora sono conosciuti in tutto il mondo come liquore Cazalla.
